When I think about grilling out, I think of barbeque, beans with pork and brown sugar, nitrate filled hot dogs (which I have been known to eat) and salads made with mayo and egg and mustard. A smorgasboard of delicious but not so great for you foods but, it can be healthy too!
Packets of fish with veggies, grilled cob corn (or almost any other veggie) and light desserts of fruit and cool whip are just a few of the things we have been trying out since my husband got his Father’s Day grill early.
I wanted to share some recipes I found in, where else, Women’s Health*. I love that magazine! I get it on my nook monthly for a buck or something, I’d have to ask my financial advisor for the exact amount and he’s busy.
Black Bean Burgers
1 1/2 cups no salt added black beans, rinsed and drained
1/2 yellow bell pepper sliced
1/3 cup rough chopped red onion
3/4 cup shredded carrot
1/3 cup dry quick cooking oats
2 1/2 tsp canola oil
1/2 tsp cumin
Put all ingredients ina food processor and pulse until combined, 2 to 3 minutes. Form into 4 patties.
Mist a piece of aluminum foil with Pam and place foil on grill. Cook patties on foil for 5 minutes, flip and cook 5 minutes more.
4 servings, 170 cal, 5.5g fat, 25 carbs, 40 mg sodium and 7g protein
Grilled Romaine Heart
1/2 romaine lettuce heart
olive oil cooking spray (I use Pam)
1/4 tsp sea salt/kosher salt
1 pinch ground black pepper
Spritz romaine heart with cooking spray and season with salt and pepper. Grill 2-3 minutes, turn and grill 2-3 minutes more.
Grilled Peaches (delicious!)
1 tbsp olive oil
1 tbsp lemon juice
2 peaches, halved
1/4 tsp cinnamon
1 pinch ground black pepper
whisk together oil and lemon juice and brush over peaches. Season with cinnamon and pepper. Grill for 3 minutes, turn and grill for 3 more minues
Remove from heat and let cool. Slice thinly. (I like to add cool whip, I love that stuff!)

Ive had black bean burgers.. But I just buy them pre made. I’ll have to try this recipe! Sounds yummy!!
