Last week was Nate’s third birthday and to celebrate (since his party was a few weeks ago) we did a birthday lunch of mexican food! He got to have a birthday taco, sopapilla, sombrero and they sang Feliz Cumpleanos to him! He also ate almost our entire basket of chips & salsa and shoveled his rice into his face. The kids loves spanish food! Nate is 1/4 Puerto Rican so we joked that it was the food of his people. He loved the sopapilla but didn’t like the chocolate on it so Momma is going to make him some at home. Enjoy some adorable pictures!





















Wait you know how to make sopapillas???? TEach me please. When I lived in Colorado one of my neighbor women was married to a Mexican guy and his mom taught her how to make lots of stuff, mainly because she showed up at a family pot luck with tamales that she got from a can and they still had the wax paper on them instead of the corn shucks bwhahah. Happy Birthday little man.. he is so stinkin adorable Stephanie. He gets it from his momma though lol.
